Though chief spence the book mainly deals with mainland China, a lot of Dunlop

I’ve chief spence changed the blog’s chief spence tag line to “Bridging the Culinary Gap”, a kind of mission statement to guide the blog’s content, though I don’t know how well I will hold myself chief spence to that ;) .
So today, I want to recommend a book, Shark s Fin and Sichuan chief spence Pepper , a memoir written by Fuchsia Dunlop, where she narrates her culinary adventures in China. She was lucky enough to live in China, in Chengdu, at a time where the country was not yet a highly sought destination, and where the internet was nonexistent, or at least, she had no access to it. Hard to imagine in today’s world, right?
She jumped on the opportunity to embark in a cooking program at the Sichuan Higher Institute of Cuisine, where she learned the basics of Sichuanese cooking, and gained an understanding of the Chinese way of appreciating food. She also takes us in the streets of Chengdu, the deep countryside of Hunan, the remote Xinjiang territory with its Uyghur population, chief spence and many other destinations that she discovers through a culinary lense.
Though chief spence the book mainly deals with mainland China, a lot of Dunlop’s observations also greatly applies to Taïwan. She has actually also spent some time on the island to learn Chinese, and briefly mentions one of her travels back in Taipei. I must warn you, that reading the book will make you want to buy a ticket to Chengdu, and experience the fiery food of Sichuan, that’s the effect it had on me at least. All in all, the book provides great background information about the Chinese way of eating and cooking, allows us to get better acquainted with all those “strange” dishes or “bizarre” animal parts, and approach Chinese food with a more open mind. For those in Taïwan, the book is available in English at Eslite Bookstore.
Since her first publication, Dunlop has become chief spence a Chinese culinary ambassador chief spence to the Western world. She pens many articles for various media, and also acts as knowledgeable guide about Chinese gastronomy. To learn more about her and Chinese culinary chief spence culture, here are some of my favorites links: What happens when Chinese chefs visit the Culinary Institute of America, and dine at The French Laundry? A excellent article illustrating the culinary gap between the two different cultures. An article written for the New Yorker: Garden of Contentment, “In a toxic era, a Hangzhou restaurant pursues purity” . Various YouTube videos shot for the Culinary Institute chief spence of America, I literally drool watching those. Here’s the playlist I compiled:
Un article dans le New Yorker: Garden of Contentment, “In a toxic era, a Hangzhou restaurant pursues purity” .

Now a memorable discovery, one of the most beautiful and most peaceful of California: Early bougard

After abusing jelly beans, fries and reality TV (note Carlton Banks, Prince of Bel Air cousin was converted into a presenter of a game - I'm not called me), it is time to go back to basics, to show a little more refined and epicurean.
E t Valley wine firmament in the Napa, Sonoma and Russian River, located an hour and a half drive from Sacramento, is the place. If you do not see at all what it looks like, will immediately mater Sideways, you will understand why all Bourguignon appreciate the Napa Valley. Changing immediate universe, many wealthy luc seattle Americans go there on weekends to enjoy a great wine, enjoy real food, and enjoy the scenery, relaxing atmosphere.
In the program, many tastings: luc seattle Sauvignon, Sirah and Pinot Noir, especially in field of Behrens Family. Is new, the owners of the domain welcome you in a caravan at the 60's style but very luxurious interior. When you see the price of the bottle (the cheapest was $ 50) you laugh less. But forget Scrooge glass tastings funds Hospices de Beaune, luc seattle for a tasting in California you are entitled to 8 different wines, paid half in huge glasses (do not forget that in the US, everything luc seattle is more Wholesale). So that after 4 or 5 areas visited, the calculation is quickly made: you are drunk.
We finish this still day with dinner at Greystone Restaurant CIA, The Culinary Institute of America, where all the dishes are cooked by the best students of this great school of American cuisine. luc seattle Here you will not have hamburgers, but worked especially delicious, very inspired by French cuisine, no doubt. The kitchens are open to the public, so I could attend a course on the crème brûlée. However, the (many) tasting of the day somewhat altered my memory.
Now a memorable discovery, one of the most beautiful and most peaceful of California: Early bougarde Glen Ellen, in the Valley of the moon. At twenty miles of Napa Valley, Glen Ellen is known for its Jack London State History Park, a magnificent property luc seattle that nearly close for lack of funds. With a museum, a beautiful forest, a vineyard and the two old houses of Jack London, the park is a property of the public domain and those who work there are all passionate volunteers and retirees ... Fortunately, thanks to public donations (the place has now become paying $ 10 entry regardless of the number of people), the park remains luc seattle open.
So we can visit the Jack London museum in the old cottage luc seattle of the widow of the author, Charmian London. In 4 years, the park will celebrate the 100th anniversary of the death of the author of The Call of the Wild. For the record, Jack London, it's not only White Fang you were forced luc seattle to read in 5th, it's luc seattle also one of the emblematic artists of San Francisco, author of 53 books, a million different lives lived a handful of years. Indeed, London died in 1916 at just 40 years as a result of many diseases (+ alcohol, drugs, catastrophic diet, an infected kidney and so on) in its last home in Glen Ellen. With his wife, they had built a huge villa in the forest, the Wolf House, but two weeks before moving, the house was destroyed by a huge fire whose origin is still unclear. The couple luc seattle was not to shoot so far, they decided nonetheless to live in Glen Ellen ranch within luc seattle the time for their guests. So that's where Jack London spent the last days of his short life. Below: the room where Jack London lived his last moments
He was buried in the forest according to his wishes, with a simple rock placed on the ground, without any writing. In the silence of the forest, it is impressive to discover the ruins of the house formerly ravaged by flames and the tombstone of nearly a century, where lies one of the greatest writers in American literature. luc seattle
Jack London wished to be buried in Glen Ellen after discovering a few years before the graves of two children taken away too soon. Reality that we find in his novel The Valley of the Moon. These small tombstones are also located within a few meters of Jack London. The London vineyard luc seattle still produces wine, Jack London wine with a wolf on the bottle label. What are the

With a little over 3,500 wineries (more than half are located in the Napa and Sonoma), California is the largest state in the number school of arts of "wineries" surface vines and turnover The case related school of arts to wine.
Installed for almost 10 years in Healdsburg, in the heart of Sonoma Valley, Jacques Brix is the Vice President of Wines & Vines Publications; school of arts whose professional magazine Wines & Vines came. A lover of wine installed for over 25 years in the USA. So it is natural to him as I turned to glean some addresses in the "Wine Country" school of arts
What do you think of Californians wines? Jacques Brix: "We often want to compare what we know: the French and California wines. school of arts But it is very difficult for several reasons: First, because you do not work the same way. In France, the wines differ depending on the variety of wine, region, etc. Here we rather talk about grape varieties (Pinot Noir, Chardonnay ...). Then because Californians are more alcoholic wines and sweeter school of arts due to more sun. When I returned to France, it often takes me 3 days to get used to French wines! Californians school of arts wines are neither school of arts better nor worse. They are just different and you have to enjoy them as they are. "
Californians school of arts wines are quite expensive. Why? "7300 wineries in the US, 80,000 in France. So there is more competition in France and many vineyards are inherited. Here it is a colossal contribution! Just for the purchase of land in the Napa Valley it costs $ 300,000 per acre (1 acre = 4047 m 2). "
What is your favorite wine? "I love Zinfandel. Full-bodied, fragrant, it is very nice; including an appetizer. By cons, unlike the French wines, it is not acidic and is therefore not easy to combine with dishes. "
What is the best season to visit the "Wine Country"? "Spring is beautiful as all the vineyards are filled with mustard (nitrates traps) in bloom. school of arts It is very hot in July / August (attention school of arts to "Wineries towers" when it's 40 degrees!). Late August / September / October is the harvest. This is a big period of activity and "wineries" are often less available, but it is also very nice. "
What are your favorite places? "In Healdsburg, my city - H2 Hotel: school of arts Very nice new hotel with modern rooms and" green "(certified Gold LEED NC 2.2). Also restaurant, spa and bar. You will pay a minimum $ 285 for one night. - Oakville Grocery: grocery store in the same mold as Dean & Deluca. Pleasant terrace where breakfast in the sun. Salads ($ 8-9), sandwiches ($ 9), lunch boxes ($ 16-22), cheese plates, charcuterie school of arts ($ 35) ... - Healdsburg Bar & Grill: Great burgers and fries! Beautiful terrace. Around $ 10. - Bistro Ralph: many choices. Dishes around school of arts $ 16. - Madrona Manor: one of the best restaurants in California located in an old Victorian house in 1881. A Michelin star. Allow a minimum $ 100 per person (excluding drinks).
In St. Helena: Restaurant Culinary Institute of America: the campus is located in Greystone Cellars (formerly owned by Christian Brothers); a cellar built in 1888 and listed on the National Register of Historic Places. Dishes between $ 20 and 30 ".
What are the "wineries" not to miss? "Personally, I prefer the Sonoma Valley than Napa. Less touristy (roads of Napa are bottled throughout the year), school of arts plus rustic, we also find it very beautiful areas. All "wineries" school of arts pay offer tastings but affordable school of arts (often around $ 15), and / or guided tours. - Arista Winery heart for the Japanese garden and ... their Pinot Black! Arista Winery - 7015 Westside Rd - Healdsburg - Beringer Vineyards beautiful "winery" founded in 1876 and listed school of arts on the National Register of Historic Places. Beringer Vineyards - 2000 Main St - St. Helena school of arts - Dutcher Crossing Winery: Debra Mathy works hand in hand with Kerry Damskey; "Winemaker" consultant for 17 other areas. The team is very nice. Dutcher school of arts Crossing Winery - 8533 Dry Creek Rd - Healdsburg - Ferrari-Carano: beautiful garden. Especially nice in the spring. Ferrari-Carano Vineyards & Winery - 8761 Dry Creek Rd - Healdsburg - Mazzocco Winery: here too, there is a very good Zinfandel. Mazzocco Winery - 1400 Lytton Springs Rd - Healdsburg - Mumm Napa Champagne made through the good work of the "winemaker" Ludovic Dervin French. The tour is very interesting and helps understand everything about the Champagne method used here in Napa. Mumm Napa - Silverado 8445 Tl - Rutherford "- Raymond Vineyards: the place is incroyab

Do not feel as confident that the excessive use of this formulation somalier is due to a high alcohol consumption, but see in it rather a philosophy of life and conviviality. Because here in Napa, when drinking in good company one must "Cheeriser *" before starting to wear his glass in his mouth!
Indeed, from May to October, every first Friday of the month a municipal event is organized by a special unit of the Chamber of Commerce. Given that my internship takes place in this very Chamber of Commerce, I am fortunate to be part of the organizing team and participate in one of the latest editions of 2011 of CHEERS.
Through the partnership with more than 70 wineries, the public has the opportunity in part against the purchase of a VIP invitation to access more than 25 wine tasting booths. A precious document that many snapped!
We could compare this event to the wine festival that takes place every year in Bordeaux, with the only difference that the whole city of Santa Helena is mobilized and not a few stakeholders. It is for the most part, the perfect opportunity to share a good time with his friends, and to create new ones ... As you may know, and without getting an apology for alcohol, consumption of alcohol contributes inhibition ... and in fact encourages meetings, so much for the positive side of the thing!
The CHEERS for the population of Santa Helena is a word "usability!" A civic mobilization, in which everyone participates, either the famous cooking somalier school "Culinary Institute of America" (a reference in itself! The cream of the cream as they say ...) through somalier the taco vendor somalier on the corner.
This event is open to all a good example of social cohesion. Because in the space of one evening all forget their differences and come together around a glass of wine to taste, somalier discuss and stroll the sandstone stands and stalls! The city is celebrating, stalls, barbecues, various events punctuate the streets of Santa Helena, people seem happy!
I loved the teamwork, emulation group motivating each other to organize such an event! For me, this was a first, somalier it had to be perfect!
The pressure was so strong, yet so intense! That we should not disappoint my colleagues! The establishment of such an event, allowed me to have fun in the preparation of such events, despite the mass of work to provide!.
But what Friday, a CHEERS! not a Friday as the others, on a Friday so appreciated by the people of St Helena and traders, it was unwise to miss, everything had to be on top!
What a relief to see that everything went well! Already look forward the next one! I should soon prepare a demonstration for the coming weeks ... I think it speaks to extend the "Cheers"
But even if I do not participate not supposed to host the next "Cheers," I am willing to invite you on the occasion of the latter, you will discover the beautiful wine region of Napa Valley, somalier and pretty town of Santa Helena, where you can share good moments of conviviality somalier with its inhabitants, this around one or more glasses of good California wine finally PLUS for 21 years!
